  • 1 pound Italian sausage, casings removed
  • 1 pound rigatoni pasta
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Place the Italian sausage, rigatoni pasta, chopped onion, minced garlic, diced tomatoes (with juice), and chicken broth into a large, deep skillet or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally to break up the sausage.
  3. Once boiling, reduce the heat to medium-low, cover the skillet, and simmer for 15 to 18 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir every few minutes to prevent sticking.
  4. Remove the skillet from the heat. Stir in the heavy cream and Italian seasoning until combined.
  5. Stir in the shredded Parmesan cheese until the sauce is smooth and creamy.
  6. Season with salt and pepper to your taste.
  7. Serve immediately, garnished with fresh basil if you wish.

  • You can substitute Italian sausage with smoked sausage or chicken sausage for a different flavor profile.
  • If the sauce seems too thick after adding the cream, add a splash more broth or water until you reach your desired consistency.
  • This recipe works well with penne or rotini if you do not have rigatoni.
