Make this rich, creamy, and cheesy sausage cream cheese dip for your next gathering. It is a simple, crowd-pleasing appetizer perfect for game day or parties, using just a few core ingredients.

  • 1 pound breakfast sausage (or spicy ground sausage)
  • 1 (8 ounce) package cream cheese, softened
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 cup shredded sharp cheddar cheese (or Velveeta, cubed)
  • 1/4 cup heavy cream (optional, for extra creaminess)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. If using a stovetop, brown the sausage in a large skillet over medium heat. Drain off any excess grease.
  2. If using a slow cooker, place the browned sausage in the bottom of the slow cooker insert.
  3. Add the softened cream cheese, undrained Rotel, garlic powder, and pepper to the skillet (or slow cooker).
  4. Stovetop: Cook over low heat, stirring constantly until the cream cheese is fully melted and the mixture is smooth and combined. Stir in heavy cream now if using.
  5. Slow Cooker: Cook on LOW for 2 hours or HIGH for 1 hour, stirring every 30 minutes until smooth. Stir in heavy cream now if using.
  6. Stir in the shredded cheddar cheese (or Velveeta) until completely melted and incorporated, creating a thick, cheesy dip.
  7. Transfer the dip to a serving bowl if cooked on the stovetop, or keep warm in the slow cooker on the ‘Keep Warm’ setting.
  8. Serve hot with tortilla chips, crackers, or sturdy vegetables for dipping.

Notes

  • For a thicker dip, reduce the amount of Rotel liquid or omit the optional heavy cream.
  • If you want a spicier kick, use hot sausage or add a dash of hot sauce to the mixture.
  • This dip reheats well in the microwave or on the stovetop over low heat.
