You need just a few simple ingredients to make this creamy, nutty, and crunchy pistachio puppy chow. This easy no-bake treat uses white chocolate and pistachio pudding mix for intense flavor and color, making it perfect for parties or edible gifts.

  • 12 ounces white chocolate chips
  • 1/2 cup creamy peanut butter (optional, for texture)
  • 1/4 cup unsalted butter
  • 1 (3.4 ounce) box instant pistachio pudding mix
  • 1 1/2 cups powdered sugar
  • 1/2 cup chopped pistachios (optional, for topping)

Instructions

  1. Measure the Rice Chex cereal into a very large bowl. Set aside.
  2. In a medium microwave-safe bowl, combine the white chocolate chips, peanut butter (if using), and butter. Microwave in 30-second intervals, stirring well after each, until the mixture is completely smooth and melted.
  3. Pour the melted white chocolate mixture over the cereal in the large bowl. Gently fold the cereal until it is evenly coated.
  4. Sprinkle the dry instant pistachio pudding mix over the coated cereal. Fold again until the pudding mix coats all the pieces.
  5. Place the powdered sugar in a large zip-top bag. Add the coated cereal mixture to the bag. Seal the bag, leaving some air inside, and shake well until all the cereal pieces are covered in powdered sugar.
  6. Spread the finished pistachio puppy chow onto a sheet of parchment paper to cool and set. If you are adding chopped pistachios, sprinkle them over the top while the coating is still slightly sticky.
  7. Once completely cool, break apart any large clumps. Store in an airtight container.
