  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract

  • For Streusel Topping: 1/4 cup brown sugar, 2 tablespoons flour, 2 tablespoons cold butter (cubed), 1/4 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. Make the streusel topping first: In a small bowl, combine 1/4 cup brown sugar, 2 tablespoons flour, and 1/4 cup pecans. Cut in the 2 tablespoons of cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Set aside.
  3. In a large bowl, combine the 1 cup chopped pecans, 1 cup packed brown sugar, 1/2 cup flour, and 1/4 teaspoon salt. Stir these dry ingredients to mix well.
  4. In a separate bowl, lightly beat the 2 eggs. Add the 1/2 cup melted butter and 1/2 teaspoon vanilla extract. Mix until combined.
  5. Pour the wet ingredients into the dry mixture. Stir until just combined; the batter will be thick. Do not overmix.
  6. Spoon the batter evenly into the muffin cups, filling each about 2/3 full.
  7. Sprinkle the reserved streusel topping evenly over the batter in each cup.
  8. Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted near the edge comes out clean. The center should remain slightly gooey, like pecan pie filling.
  9. Let the muffins cool in the pan for 5 minutes before moving them to a wire rack to finish cooling. Serve warm or at room temperature.

  • For an extra layer of classic pie flavor, add a small pinch of cinnamon or nutmeg to the dry ingredients.
  • These buttery pecan delights store well in an airtight container at room temperature for up to 3 days.
