Millionaire Bacon: Sweet and Spicy Candied Bacon

Make decadent, sticky, and slightly spicy candied bacon at home. This recipe bakes thick-cut bacon slowly until it develops a caramelized, chewy glaze.

  • 1 pound thick-cut bacon
  • 1/2 cup packed brown sugar
  • 2 tablespoons pure maple syrup
  • 1 teaspoon black pepper, freshly ground
  • 1/2 teaspoon cayenne pepper (adjust to your heat preference)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil for easy cleanup.
  2. Place a wire cooling rack on top of the prepared baking sheet. This allows air to circulate and helps the bacon crisp evenly.
  3. Arrange the bacon strips in a single layer on the wire rack. Do not overlap the strips.
  4. In a small bowl, mix together the brown sugar, maple syrup, black pepper, and cayenne pepper until combined.
  5. Brush or spoon the sugar mixture evenly over the top side of each bacon strip.
  6. Bake for 15 minutes.
  7. Remove the pan from the oven. Carefully flip each bacon strip over using tongs.
  8. Brush the remaining sugar mixture onto the second side of the bacon.
  9. Return the pan to the oven and bake for another 10 to 15 minutes, watching closely. The sugar will caramelize quickly.
  10. Remove the bacon when it reaches your desired crispness and the glaze is bubbly and dark brown, but not burnt.
  11. Let the bacon cool on the rack for 5 minutes before transferring it to a clean sheet of parchment paper to cool completely. The glaze will set as it cools.

Notes

  • For extra spice, add 1/4 teaspoon of red pepper flakes to the sugar mixture.
  • If you prefer chewier bacon, reduce the oven temperature to 325 degrees Fahrenheit and cook slightly longer.
  • If the sugar mixture starts to look too dark before the bacon is cooked, reduce the oven temperature immediately.
