Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, sliced horizontally into four thin cutlets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 tablespoons all-purpose flour (for dredging)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved sun-dried tomato oil (from the jar, optional, for extra flavor)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked pasta (penne or rigatoni work well)
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken: Season the chicken cutlets on both sides with salt, pepper, garlic powder, and oregano. Lightly dredge each piece in flour, shaking off any excess.
  2. Sear the chicken: Heat the butter and olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3 to 4 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. Sauté aromatics: Reduce the heat to medium. Add the chopped sun-dried tomatoes to the skillet and cook for 1 minute. Add the minced garlic and cook until fragrant, about 30 seconds. Do not let the garlic burn.
  4. Build the sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 2 minutes.
  5. Make it creamy: Stir in the heavy cream, reserved sun-dried tomato oil (if using), Italian seasoning, and red pepper flakes. Bring the sauce to a gentle simmer.
  6. Thicken and finish: Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and thickened. Taste the sauce and add more salt or pepper if needed.
  7. Combine: Add the cooked pasta and the seared chicken back into the skillet. Toss everything gently to coat the pasta and chicken thoroughly in the Parmesan cream sauce.
  8. Serve immediately: Divide the Marry Me Chicken Pasta among bowls. Garnish with fresh basil or parsley and extra Parmesan cheese.

Notes

  • If you prefer a one-pot method, cook your pasta directly in the sauce mixture, adding extra chicken broth as needed until the pasta is tender.
  • For a richer flavor, use the oil from the sun-dried tomato jar instead of plain olive oil when searing the chicken.
  • This dish pairs well with a simple side salad or crusty bread to soak up the extra sauce.
