Make Mayak Gyeran, or Korean Marinated Eggs, with jammy yolks. This recipe uses a simple, savory soy sauce marinade that creates an addictive, umami-rich flavor perfect for meal prep or topping rice bowls.

  • 6 large eggs
  • 1 cup soy sauce
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 2 green onions, chopped
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon toasted sesame seeds for garnish

Instructions

  1. Gently place the eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil over high heat.
  2. Once boiling, immediately cover the pan, remove it from the heat, and let the eggs sit for exactly 6 minutes and 30 seconds for jammy yolks.
  3. Prepare an ice bath by filling a large bowl with ice and cold water. Immediately transfer the eggs to the ice bath to stop the cooking process. Let them cool completely, about 10 minutes.
  4. Carefully peel the cooled eggs. Set aside.
  5. Prepare the marinade: In a medium bowl or a sealable plastic bag, combine the soy sauce, water, sugar, rice vinegar, minced garlic, chopped green onions, sesame oil, and red pepper flakes (if using). Whisk until the sugar dissolves.
  6. Place the peeled eggs into the marinade mixture. Ensure they are fully submerged.
  7. Cover the container and refrigerate. Marinate the eggs for a minimum of 6 hours, but overnight is best for maximum flavor absorption.
  8. When ready to serve, remove the eggs from the marinade and slice them in half. Drizzle with a little extra marinade and garnish with toasted sesame seeds.

Notes

  • For the best jammy yolk texture, do not overcook the eggs. The 6.5-minute soft boil is key.
  • You can reuse the marinade once to marinate another batch of eggs, but discard it after the second use.
  • These make an excellent high-protein snack or a flavorful topping for ramen or rice bowls.
