Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (10.75 ounce) can cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 (4 ounce) can diced green chiles, drained
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (7.5 ounce) package refrigerated biscuit dough

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef mixture, cream of mushroom soup, cream of chicken soup, milk, half of the shredded cheddar cheese, frozen mixed vegetables, diced green chiles, garlic powder, salt, and pepper. Mix until everything is well combined.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. Arrange the refrigerated biscuit dough pieces over the top of the beef mixture. You can tear them into smaller pieces or place them whole, leaving small gaps between them.
  6. Bake for 25 to 30 minutes, or until the biscuits are golden brown and cooked through.
  7. Remove the casserole from the oven and immediately sprinkle the remaining shredded cheddar cheese over the hot biscuits.
  8. Let the casserole rest for 5 minutes before you slice and serve it.

Notes

  • For a Tex Mex Casserole variation, add 1 packet of taco seasoning to the beef mixture when browning.
  • You can prepare the beef mixture ahead of time and keep it refrigerated for up to two days before assembling and baking.
  • If you prefer a different topping, use a can of refrigerated crescent rolls or a simple cornbread mix instead of biscuits.
