You need a crowd-pleasing, easy chicken dinner. These Honey Garlic Chicken Skewers deliver juicy, flavorful results whether you use your grill, oven, or air fryer. This simple recipe is perfect for weeknight meals or your next party appetizer.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 Tbsp rice vinegar
  • 1 Tbsp minced fresh garlic
  • 1 tsp grated fresh ginger
  • 1/2 tsp ground black pepper
  • 1/4 cup water or chicken broth
  • 1 Tbsp cornstarch (for thickening)
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Place the cubed chicken into a large bowl.
  2. In a separate small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, and black pepper to create the marinade.
  3. Pour half of the marinade over the chicken, toss to coat completely, and let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator. Reserve the other half of the marinade for the glaze.
  4. If grilling, preheat your grill to medium-high heat (about 400°F). If baking, preheat your oven to 400°F (200°C) and line a baking sheet with foil.
  5. Thread the marinated chicken pieces onto the soaked skewers, leaving a small space between each piece.
  6. To cook: If grilling, place skewers on the oiled grates and cook for 10-12 minutes, turning occasionally until cooked through. If baking, arrange skewers on the prepared sheet and bake for 18-20 minutes, flipping halfway.
  7. While the chicken cooks, prepare the glaze: Pour the reserved marinade into a small saucepan. In a separate tiny bowl, mix the cornstarch with the water or broth until smooth, then whisk this slurry into the saucepan.
  8. Bring the sauce to a simmer over medium heat, stirring constantly until it thickens into a glossy glaze (about 2-3 minutes). Remove from heat.
  9. Once the chicken is fully cooked, brush the warm honey garlic glaze generously over all sides of the skewers. Serve immediately.

Notes

  • For extra flavor and color, thread pieces of bell pepper or onion between the chicken cubes on your skewers.
  • If you are air frying, cook the skewers at 380°F for 10-12 minutes, flipping halfway through, then brush with the glaze and cook for 1 minute more to set the sauce.
