1 sheet frozen puff pastry, thawed
4 ounces soft goat cheese, softened
2 tablespoons honey, plus extra for drizzling
1 teaspoon fresh thyme leaves (optional)
1 egg, beaten (for egg wash)
Pinch of salt
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
In a small bowl, mix the softened goat cheese with the salt and half of the thyme leaves, if using.
Place a small spoonful (about 1 teaspoon) of the goat cheese mixture onto the center of each pastry square.
Fold the corners of the pastry over the cheese to create a small bundle or pouch shape, pressing the edges together to seal. You can also simply fold the square in half to create a triangle.
Place the sealed bites onto the prepared baking sheet. Brush the tops lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
Remove the bites from the oven. Immediately drizzle generously with the 2 tablespoons of honey.
Sprinkle with the remaining fresh thyme, if desired. Serve warm for the best texture.
Notes
For extra crunch, press finely chopped pecans or walnuts onto the goat cheese before sealing the pastry.
If you prefer a savory kick, substitute the regular honey with hot honey.
These bites are best served warm, shortly after baking.
