Make this easy garlic butter rice side dish using simple ingredients like long-grain white rice, fresh garlic, and rich butter. It cooks quickly and results in fluffy, savory rice perfect for weeknight dinners.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 small yellow onion, finely chopped (optional)
  • 4 cloves fresh garlic, minced
  • 1 1/2 cups long-grain white rice
  • 2 1/2 cups chicken broth (or water)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat. If using onion, add it now and cook until soft, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  3. Add the uncooked rice to the saucepan and stir constantly for 1 to 2 minutes to toast the grains lightly.
  4. Pour in the chicken broth and add the salt and pepper. Bring the mixture to a boil.
  5. Once boiling, immediately reduce the heat to low, cover the saucepan tightly, and simmer for 15 to 18 minutes, or until all the liquid is absorbed. Do not lift the lid during this time.
  6. Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
  7. Remove the lid. Add the remaining 2 tablespoons of butter and fluff the rice gently with a fork.
  8. Stir in the fresh parsley before serving.

Notes

  • For the best flavor, use good quality, rich butter.
  • If you skip the optional onion, add the garlic directly to the melted butter and cook briefly before adding the rice.
  • This rice pairs well with chicken, steak, or roasted vegetables.
