  • 1 lb boneless, skinless chicken breast, cut into bite-size cubes
  • 1 tablespoon olive oil
  • 5 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cut the chicken breast into uniform, bite-size pieces. Season the chicken pieces evenly with salt and pepper.
  2. Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the hot skillet in a single layer. Cook for 5 to 7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  4. Reduce the heat to medium-low. Add the remaining 4 tablespoons of butter to the same skillet. Let the butter melt.
  5. Add the minced garlic, dried basil, and dried oregano to the melted butter. Cook for about 1 minute until the garlic is fragrant. Do not let the garlic burn.
  6. Return the cooked chicken bites to the skillet. Toss everything together to coat the chicken completely in the garlic butter sauce. Cook for 1 minute to heat through.
  7. Remove the skillet from the heat. Stir in the fresh chopped parsley.
  8. Serve your garlic butter chicken bites immediately over rice, pasta, or with a side of vegetables.
