Easy Cranberry Brie Bites with Puff Pastry

Make simple, festive cranberry brie bites using puff pastry for your next holiday gathering. These appetizers are quick to assemble and perfect for Thanksgiving or Christmas.

Ingredients

  • 1 package (14.1 ounces) refrigerated puff pastry, thawed
  • 8 ounces brie cheese, rind removed and cut into small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon orange zest
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a mini-muffin pan.
  2. Unroll the thawed puff pastry sheets on a lightly floured surface. Use a 2-inch round cookie cutter to cut out circles from the pastry.
  3. Gently press each pastry circle into the cups of the mini-muffin pan.
  4. In a small bowl, mix the cranberry sauce and orange zest together.
  5. Place one small cube of brie cheese into each pastry cup.
  6. Top the brie with about 1/2 teaspoon of the cranberry sauce mixture. Sprinkle a pinch of chopped rosemary over the top of each bite.
  7. Brush the edges of the pastry lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  9. Let the bites cool in the pan for 5 minutes before carefully removing them to a wire rack to cool slightly before serving.

Notes

  • You can prepare the assembled, unbaked bites up to 4 hours ahead. Cover the pan and refrigerate. Add 2-3 minutes to the baking time if baking directly from the refrigerator.
  • If you prefer a slightly different flavor, substitute the orange zest and rosemary with 1 teaspoon of balsamic glaze drizzled over the cranberry sauce before baking.
  • These bites reheat well in a 300 degree oven for about 5 minutes until the cheese is soft again.
