Easy Cheesy Dorito Casserole

Make this simple, cheesy Tex-Mex casserole with ground beef or chicken, Rotel tomatoes, and a crunchy Dorito topping. It is fast to assemble for busy weeknights or game days.

  • 1 pound ground beef or shredded chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 packet (1 ounce) taco seasoning mix
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1 bag (9.25 ounces) Nacho Cheese flavored Doritos, lightly crushed

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. If using ground beef, cook it in a skillet over medium heat until browned. Drain off any excess grease. If using shredded chicken, skip this step.
  3. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, Rotel tomatoes (with liquid), taco seasoning, milk, and 1 cup of the shredded cheese. Stir until well mixed.
  4. Add the cooked ground beef or shredded chicken to the soup mixture and stir to coat everything evenly.
  5. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  6. Pour the meat and soup mixture over the Doritos layer and spread it out.
  7. Sprinkle the remaining 1 cup of shredded cheese over the top of the mixture.
  8. Bake for 20 minutes.
  9. Remove the casserole from the oven and sprinkle the remaining crushed Doritos over the cheese layer.
  10. Return the casserole to the oven and bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is heated through.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • For a ground beef dorito bake, use 80/20 ground beef for better flavor.
  • You can substitute cream of chicken soup with cream of celery or cream of cheddar soup.
  • To make a doritos chicken casserole, use 3 cups of pre-cooked, shredded chicken.
  • You can assemble this entire casserole ahead of time, cover it, and refrigerate for up to 24 hours. Add 10-15 minutes to the initial baking time if baking directly from the refrigerator.
