1 (4-6 lb) bone-in or boneless turkey breast
1/2 cup unsalted butter, softened
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon dried sage
1 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth
1 medium onion, quartered
Instructions
In a small bowl, combine the softened butter, chopped rosemary, thyme, sage, salt, and pepper to create the herb butter mixture.
Pat the turkey breast dry with paper towels. Gently lift the skin over the breast meat and rub about half of the herb butter directly onto the meat. Rub the remaining butter over the outside of the skin.
Place the quartered onion in the bottom of your 6-quart or larger slow cooker. Place the seasoned turkey breast on top of the onions.
Pour the chicken broth around the turkey breast in the slow cooker.
Cover the slow cooker and cook on LOW for 5 to 7 hours, or on HIGH for 3 to 4 hours, until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees Fahrenheit.
Carefully remove the turkey breast from the slow cooker and let it rest on a cutting board, loosely covered with foil, for 15 minutes before slicing.
If you want gravy, skim any excess fat from the liquid remaining in the slow cooker. Thicken the remaining broth with a cornstarch slurry (2 tablespoons cornstarch mixed with 3 tablespoons cold water) and cook on HIGH for 5-10 minutes until thickened.
Notes
For a whole turkey in the crockpot, you must use a very large cooker (8 quart minimum) and adjust cooking time significantly, often requiring a full day on LOW.
If you are using a Butterball turkey breast, follow the same seasoning steps for a flavorful result.
To achieve crispy skin, carefully transfer the cooked turkey breast to a baking sheet and broil for 3-5 minutes after resting, watching closely to prevent burning.
