  • 1/2 cup finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup whole milk
  • 4 ounces cream cheese, cut into cubes
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the onion and cook until soft, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  2. Add the uncooked rice to the saucepan and toast it for 2 minutes, stirring constantly.
  3. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during simmering.
  4. Remove the saucepan from the heat. Stir in the whole milk and the cubed cream cheese until the cream cheese melts and the mixture becomes creamy.
  5. Add the shredded cheddar cheese, salt, and pepper. Stir gently until the cheese is fully melted and incorporated, creating a gooey texture.
  6. Serve immediately as a rich and creamy side dish.

  • For extra flavor, substitute half of the cheddar cheese with Monterey Jack or Gruyère.
