Make this crowd-pleasing, cheesy baked garlic bread dip. It combines roasted garlic, cream cheese, and mozzarella for a flavorful, hot appetizer perfect for serving with crusty bread or crackers.

  • 1 head garlic
  • 1 tablespoon olive oil
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • Pinch of salt
  • 1/4 cup shredded mozzarella cheese (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8-inch oven-safe skillet or small baking dish.
  2. Roast the garlic: Slice about 1/4 inch off the top of the whole garlic head to expose the cloves. Drizzle with 1 tablespoon of olive oil. Wrap the head tightly in aluminum foil and bake for 30 to 40 minutes, or until the cloves are soft and golden brown. Let it cool slightly.
  3. Squeeze the soft, roasted garlic pulp out of the skins into a medium bowl. Discard the skins.
  4. Add the softened cream cheese, 1 cup mozzarella cheese, Parmesan cheese, sour cream, minced garlic, Italian seasoning, pepper, and salt to the bowl with the roasted garlic.
  5. Mix all ingredients together until completely combined and smooth. This is your creamy garlic dip base.
  6. Spread the dip mixture evenly into your prepared baking dish.
  7. Top the dip with the remaining 1/4 cup of mozzarella cheese.
  8. Bake for 15 to 20 minutes, or until the dip is hot throughout and the top cheese is melted and bubbly.
  9. Let the dip rest for 5 minutes before serving warm with toasted baguette slices or crackers.

Notes

  • For an extra layer of flavor, use freshly grated Parmesan cheese instead of pre-shredded.
  • If you are short on time, you can skip roasting the garlic and use 1 teaspoon of garlic powder mixed with 1 tablespoon of softened butter instead.
  • This dip reheats well; cover and bake at 350 degrees Fahrenheit until warmed through.
