  • 1 tablespoon oil
  • 1 pound ground beef
  • 1 small onion, diced (optional)
  • Salt and black pepper, to taste
  • 1 can (10.5 ounces) cream of mushroom or cream of chicken soup
  • 1 can (15 ounces) corn, drained
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix (Jiffy-style recommended)
  • Ingredients required by cornbread mix package (usually milk and egg)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat the oil in a skillet over medium heat. Add the ground beef and diced onion. Cook until the beef is browned. Season with salt and pepper. Drain any excess fat from the skillet.
  3. Stir the cream soup and the drained corn into the cooked beef mixture. Spread this beef layer evenly into the prepared baking dish.
  4. Sprinkle the shredded cheddar cheese over the top of the beef layer.
  5. In a separate bowl, prepare the cornbread mix according to the package directions, mixing in the required milk and egg.
  6. Pour the cornbread batter evenly over the cheese and beef mixture in the baking dish.
  7. Bake uncovered for 30 to 35 minutes, or until the cornbread topping is golden brown and set.
  8. Let the casserole rest for 5 to 10 minutes before you cut and serve it.

  • For a Tex-Mex flavor, add diced jalapeños or green chiles to the beef mixture before layering.
  • You can substitute ground turkey for the ground beef if you prefer.
