  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 cup chopped Roma tomatoes
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1/4 cup fresh lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Tortilla chips, for serving

Instructions

  1. Combine the rinsed black-eyed peas, black beans, thawed corn, tomatoes, bell pepper, red onion, cilantro, and minced jalapeño (if using) in a large bowl.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the zesty vinaigrette.
  3. Pour the dressing over the bean and vegetable mixture. Toss gently until all ingredients are evenly coated.
  4. Cover the bowl and chill the Cowboy Caviar for at least 30 minutes before serving to allow the flavors to combine. This is a great make ahead appetizer.
  5. Serve your healthy party appetizer cold or at room temperature with tortilla chips for dipping.
