  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped fresh or canned tomatoes (drained if canned)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder

Instructions

  1. Prepare the vegetables: Chop the red onion, green bell pepper, red bell pepper, tomatoes, and cilantro. Place all chopped ingredients into a large mixing bowl.
  2. Rinse and drain the canned black beans, black-eyed peas, and corn thoroughly. Add these rinsed beans and corn to the bowl with the vegetables.
  3. Make the zesty vinaigrette: In a small bowl or jar, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, salt, black pepper, and chili powder until well combined.
  4. Pour the dressing over the bean and vegetable mixture.
  5. Gently toss all ingredients together until everything is evenly coated with the dressing.
  6. Cover the bowl and chill the Cowboy Caviar in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.
  7. Serve cold or at room temperature with tortilla chips, sturdy crackers, or vegetable sticks.
