You can make homemade cosmic brownies that taste better than the store-bought version. This recipe delivers ultra-rich, fudgy, and dense chocolate squares topped with smooth ganache and colorful candy chips.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (for batter)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)
  • 1/2 cup candy-coated chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium saucepan over low heat, melt the butter. Remove from heat.
  3. Whisk the granulated sugar into the melted butter until combined.
  4. Whisk in the eggs one at a time until fully incorporated. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the cocoa powder, flour, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in the 1/2 cup of chocolate chips designated for the batter.
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  10. Let the brownies cool completely in the pan on a wire rack.
  11. Prepare the ganache: Place the 1 cup of chocolate chips in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips. Let stand for 5 minutes, then whisk until smooth and glossy.
  12. Pour the warm ganache over the cooled brownies and spread evenly.
  13. Immediately sprinkle the candy-coated chocolate chips over the wet ganache.
  14. Allow the ganache to set completely at room temperature or chill briefly before cutting into squares.

Notes

  • For an extra fudgy texture, use high-quality cocoa powder.
  • You can substitute the candy-coated chocolate chips with rainbow sprinkles if you prefer.
  • Chill the brownies for at least one hour before slicing for clean cuts.
