Instructions

  1. Prepare the Streusel: In a small bowl, combine the flour, brown sugar, and 1 teaspoon of cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Place the streusel in the refrigerator while you prepare the dough.
  2. Preheat and Prep: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the 1 1/2 cups of flour, baking powder, salt, and 1 teaspoon of cinnamon for the dough. Set aside.
  4. Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2 minutes.
  5. Add Wet Ingredients: Beat in the egg and vanilla extract until just combined.
