Prepare this hearty sausage, egg, and cheese casserole the night before Christmas for a stress-free holiday morning. This recipe uses a hash brown base and is perfect for feeding a crowd.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (30 ounce) package frozen hash brown potatoes, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 12 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the thawed hash browns evenly over the bottom of the prepared dish.
  3. Sprinkle the cooked sausage, chopped onion, cheddar cheese, and Monterey Jack cheese over the hash browns.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture evenly over the layers in the baking dish.
  6. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  7. When ready to bake, preheat your oven to 350 degrees F (175 degrees C). Remove the plastic wrap.
  8. Bake uncovered for 45 to 55 minutes, or until the casserole is set in the center and lightly golden brown.
  9. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • For a slow cooker option, layer ingredients as directed in a greased 6-quart slow cooker. Pour egg mixture over the top. Cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  • You can substitute ham or bacon for the sausage.
  • If you need to bake immediately, let the assembled casserole sit at room temperature for 30 minutes before placing it in the preheated oven.
