Ingredients

Scale
  • 1 tablespoon avocado oil or sesame oil
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 package (12-14 ounces) riced cauliflower (fresh or frozen)
  • 2 large eggs, lightly beaten
  • 2 tablespoons low-sodium soy sauce or tamari (for Gluten Free)
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • Optional: 1/2 cup cooked shrimp or diced chicken for High Protein Cauliflower Rice

Instructions

  1. Heat the avocado or sesame oil in a large skillet or wok over medium-high heat. Add the diced onion and carrots and cook for 3 to 4 minutes until they soften slightly.
  2. Add the frozen peas and cook for another 2 minutes. If adding protein, add the shrimp or chicken now and cook until heated through.
  3. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side. Scramble the eggs quickly until just set, then mix them into the vegetables.
  4. Add the riced cauliflower to the skillet. Spread it out evenly. Cook without stirring for 3 to 5 minutes to allow some moisture to evaporate. This step is key for achieving the right texture.
  5. Stir the cauliflower rice frequently for another 5 to 7 minutes until it is tender-crisp and resembles traditional rice.
  6. Drizzle the soy sauce (or tamari), toasted sesame oil, ground ginger, and white pepper over the mixture. Toss everything together until well combined and heated through.
  7. Taste and adjust seasoning if needed. Serve this Easy Cauliflower Rice Dinner immediately.

Notes

  • To get the best texture for your Cauliflower Fried Rice, use fresh riced cauliflower if possible, or thaw and thoroughly pat dry frozen cauliflower rice before cooking.
  • For a Keto Fried Rice Recipe, skip the peas, as they contain more carbs than other vegetables listed.
  • You can substitute tamari for soy sauce to make this a Gluten Free Fried Rice Alternative.
