  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning (use your favorite bold blend)
  • 1 pound linguine or fettuccine pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces generously with salt, pepper, and half of the Cajun seasoning.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the dry pasta and chicken broth to the same skillet. Bring the liquid to a boil, then reduce the heat to medium-low, cover, and simmer for about 10 minutes, stirring occasionally, until the pasta is nearly tender.
  4. Stir in the heavy cream, remaining Cajun seasoning, and the cubed cream cheese. Continue to cook, stirring constantly, until the cream cheese melts and the sauce thickens slightly, about 3 minutes.
  5. Stir in the Parmesan cheese until the sauce is smooth and creamy. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  6. Return the cooked chicken to the skillet. Toss everything together until the chicken and pasta are fully coated in the rich, cheesy sauce.
  7. Serve immediately. Garnish your creamy Cajun chicken pasta with fresh parsley.

Notes

  • For extra heat, add 1/4 teaspoon of cayenne pepper along with the Cajun seasoning.
  • You can substitute chicken with 1 pound of peeled and deveined shrimp; add the shrimp during the last 3 minutes of simmering so it cooks through without becoming tough.
