  1. Prepare the peanut butter filling: In a large bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and salt until the mixture is smooth and creamy.
  2. Prepare the graham crackers: Break the graham cracker sheets in half to create rectangles. You will need one rectangle for the bottom layer and one for the top layer for each bite.
  3. Assemble the bites: Spread a layer of the peanut butter mixture onto one graham cracker half. Place a second graham cracker half on top to create a small sandwich. Repeat until all graham crackers are used.
  4. Chill the sandwiches: Place the assembled peanut butter graham cracker sandwiches on a baking sheet lined with parchment paper. Freeze for at least 30 minutes until firm. This step is key for easy dipping.
