Make this BLT Chicken Salad using leftover chicken for a creamy, crunchy, and satisfying meal ready in under 15 minutes. It combines classic bacon, lettuce, and tomato flavors with tender chicken, perfect for lunch or meal prepping.

  • 2 cups cooked, shredded chicken (rotisserie works well)
  • 4 slices bacon, cooked until crisp and crumbled
  • 1 cup chopped romaine lettuce, crisp
  • 1 large tomato, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. If using bacon, cook it until crisp. Drain the bacon and crumble it. Set aside.
  2. In a medium bowl, combine the shredded chicken, diced tomato, and chopped lettuce.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper to make the dressing.
  4. Pour the dressing over the chicken and vegetable mixture.
  5. Gently fold all ingredients together until the chicken is evenly coated.
  6. Stir in most of the crumbled bacon, reserving some for garnish.
  7. Serve immediately, or chill for meal prep. Garnish with remaining bacon before serving.
