You can make this elegant baked brie in puff pastry for your next gathering. It features warm, gooey brie cheese wrapped in flaky pastry. This recipe is simple to prepare and serves as a show-stopping appetizer for holidays or parties.

  • 1 (8-ounce) wheel Brie cheese, cold
  • 1 sheet frozen puff pastry (about 10 ounces), thawed
  • 2 tablespoons fruit preserves (apricot, fig, or raspberry work well)
  • 1 large egg, beaten with 1 teaspoon water (for egg wash)
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional: Honey or maple syrup for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If using, lightly toast the chopped nuts in a dry skillet over medium heat for about 3 minutes until fragrant. Set aside.
  3. Unfold the thawed puff pastry sheet onto a lightly floured surface. If the sheet is large, you may need to trim it slightly to fit the brie wheel.
  4. Place the cold Brie wheel in the center of the pastry. If using preserves, spread them evenly over the top surface of the Brie wheel. If using nuts, sprinkle them over the preserves now.
  5. Bring the edges of the puff pastry up and over the Brie, completely enclosing the cheese. Trim any excess pastry, leaving about a 1-inch overlap. Pinch the seams firmly together to seal the pastry completely. You want no gaps where the cheese can escape.
  6. Carefully flip the pastry-wrapped Brie seam-side down onto the prepared baking sheet.
  7. Brush the entire surface of the pastry with the egg wash. This helps it brown nicely. If you like, use the back of a knife to lightly score a decorative pattern on top, being careful not to cut through the pastry.
  8. Bake for 20 to 25 minutes, or until the pastry is golden brown and puffed. The cheese inside should be soft and melted when gently pressed.
  9. Remove from the oven and let it rest on the baking sheet for 5 minutes before transferring to a serving platter.
  10. Drizzle with honey or maple syrup, if desired, just before serving. Serve immediately with crackers, sliced baguette, or apple slices.

Notes

  • Keep the Brie cold before wrapping; this prevents the pastry from becoming greasy while it bakes.
  • For a crispier bottom crust, you can chill the wrapped brie on the baking sheet for 15 minutes before applying the egg wash and baking.
  • If you are making this for a large crowd, consider making two smaller wrapped wheels instead of one large one for easier serving.
