Make these simple, no-bake avalanche cookies when you need a fast dessert. These crunchy clusters use white chocolate, peanut butter, cereal, and marshmallows for an easy treat perfect for holidays or potlucks.

Ingredients

Scale
  • 12 ounces white chocolate chips
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal
  • 3 cups mini marshmallows

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted.
  3. Stir in the crispy rice cereal and mini marshmallows until all the dry ingredients are evenly coated with the chocolate mixture.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet. You can shape them into rough mounds or drop them as clusters.
  5. Let the avalanche cookies set at room temperature for about 30 minutes, or place them in the refrigerator for 15 minutes until firm.
  6. Store the finished cookies in an airtight container.

Notes

  • For a chocolate version, substitute semi-sweet chocolate chips for the white chocolate chips.
  • You can add one cup of chopped nuts or crushed pretzels to the mixture for extra crunch.
  • If you do not have a microwave, melt the chocolate and peanut butter together slowly in a double boiler over low heat.
